Hey look, the picture above seems unfair for me.
The way it cooked and served was just in the right place. While mine, you would see how horrible it was. Hahahaha.
Honestly, my final result was not as good as the photo above. Nope, my goals were not about making a photogenic food or whatever it was, all I wanted was to show you how simple it was and how tasty it was, and how shouldn't it be posted on. Nevermind.
Yepp, today I'm going to tell you how to make a simple, very quick, easy, cheap, and healthy pancake.
Okay, I've tried this recipe for my iftar.
But I think it is totally better if we make it for breakfast, though there is nothing wrong if we make it into a snack. It's all up to you guys.
It's all the easiest way. Why is this simple? because I only add three ingredients to the admixture. At least we only need three of them. Instead of making a general pancake, let's put it into the healthy one. Since we don't need any gluten and any sugar.
Ingredients:
- 2 small sweet potatoes, baked and cooled it down
- 2 large eggs
Okay, let's move to the next stage!
Steps:
1. Place sweet potatoes in a bowl, peel them off and mash it using a fork. It's an alternative way so we don't have to use the blender. But, some sweet potato chunks may remain.
2. Combine the sweet potato, eggs, salt, and stir the ingredients together with a spoon.
3. Heat the pan over medium-high heat. Add enough butter ( I prefer to use butter instead of oil. Except we could use olive oil but this time I ran out of it. Sometimes I don't add any butter or oil too and it's fine )
4. Spoon out 1/4 cup of batter and cook for 3 or 4 minutes.
5. Gently flip the pancake with a thin spatula and cook for 3 or 4 minutes on the second side.
6. For the topping, we can add mixed yogurt and maple syrup. But this time only add Honey.
Tadaaaa, it's done!
I forgot to take a picture after spooning a mouthful of this yummy sweet potato pancake. And here we go.
Doesn't it better than your imagination? or is this still too horrible?
After choosing which one the best picture to be posted here, I realized, the pancake seemed like a PACMAN whose ready to eat that spoon. HAHA.
